Appalachian to the Core.

Get ready for a variety of rich apple experiences that begin with Virginia apples, pressed in-house. Next, we gather spruce, ginger, seasonal fruits and hops from local and regional farms. We’re fortunate that Kelly Ridge Farms has supplied us with space for our cidery and is our primary source of apples and hops.

Finally, we blend, balance and bottle.

We know you’ll find them…

Drawing on the entrepreneurial spirit, hard-earned resourcefulness and brilliant adaptability of past generations, we take every opportunity we can to experiment. The result is a handful of small-batch ciders and nano-batches that we bet you won’t find anywhere else.

Like the cider makers of the past, we reach for regional flavors to guide our creativity and infuse our apples.

Our labels continue to pay homage to this beautiful land, with textures borrowed from topographical maps of the region.

Some of these blends have become a Taproom favorite, and the locals know that they’d better grab a pour while they last.


Blueberry

This small-batch is a Taproom favorite. with jammy, green apple aromas, this blueberry infused, semi-sweet cider pairs perfectly with a variety of hearty plates, as well as delicate deserts.

Smoked Apple
Whiskey Barrel Aged

For this semi-dry cider, we mixed in applewood smoked apples. Then we aged it in locally sourced whiskey barrels, creating a perfectly balanced blend that has
full-bodied mouthfeel and combines apple-tannin flavor, smoky apples and whiskey aroma.

Peach

Our small-batch peach is remarkably dry for a fruited cider, retaining the essence of peach flavor without too much sweetness. This is a bright cider with a fresh, tangerine aroma and a clean finish.

Talk about Appalachian to the Core, our peaches are hand pitted then fermented, and come from the Berrier Farms in Cana, VA.

This one calls for your grandma’s apple pie and ice cream, that hot-summer-day milkshake, salty snack or chocolate treat.

Farmhouse

Farmhouse: Funky and Wild.

This is our take on the classic farmhouse-style cider, enjoyed by early American settlers in Appalachia and beyond.

For this cider, brett yeasts go through a multi culture ferment reminiscent of sour beer styles.  Then they are aged in virgin white oak barrels custom made and toasted locally at Speyside Bourbon Cooperage in Glade Spring VA. Each sip will give vanilla and roast-y notes compete with that barn-house funk sourness

You’ll want to grab a Farmhouse for those Carolina barbeques, crab boils, or even your mom’s pot roast. You can even pair it with some fresh fruit or dark chocolate. This unique TC3 blend is for the bold!

Ginger

This cider is infused with the fresh zing of ginger, home-grown and hand picked from Tom’s garden. Enjoy a candied ginger aroma that pairs perfectly with Asian inspired dishes, it brightens dishes, balances spicey flavors and is a a must for every chef’s kitchen.

Smoked

Jalapeño

If you’re ready for all of the flavor of a cider infused with homegrown jalapeños smoked in applewood, this one is for you. Don’t sweat the spice level, this one is flavor forward with only the tiniest bit of spice. This cider pairs perfectly with cheeses and is an incredible mixer for a spicy margarita.
